Breakfast Tacos Recipe {Happy Cinco de Mayo!}

Breakfast tacos will be your new go to recipe for dinner, or breakfast for dinner, actually!

In honor of Cinco de Mayo, I offer you one of my favorite comfort food recipes - Breakfast Tacos! These could not be any easier, though they do require a couple pans a bit of time.

But not too much time, I promise. And every minute is worth it.

This is less of recipe and more of a method. Pick your favorite breakfast meat (sausage, bacon, canadian bacon), pick your favorite cheese, then your favorite salsa. Combine in a freshly fried corn tortilla and you are all set! Add sour cream, jalapenos, or anything else that suits your fancy!

It might seem like a pain to fry up tortillas when you can buy crunchy taco shells, but these taste so fresh and have the perfect texture.

Here's my method for one serving (yes, I consider three of them to be one serving):

RECIPE

3 corn tortillas (or crunchy taco shells)
Canola or Vegetable Oil for frying
3 strips bacon or any breakfast meat
3 eggs, lightly beaten
Splash of milk
Dash of Hot Sauce
Salt and Pepper, to taste
1/2 cup cheese
Salsa, to taste
Any other toppings you like on tacos (sour cream, pickled jalapenos, chopped onion, etc.)


Fry the tortillas: Heat oil over medium heat in a small skillet. There should be about 1/4 inch of oil in the pan. Using tongs, flip the tortilla after it starts to bubble up a bit. Fry it flat for a few seconds, then fold it in half to make a taco shell shape. Your tongs can help you hold the shape like this:

You can flip them over a couple times until they are just starting to get brown spots. Once crispy to your liking, remove from oil and place on a paper lined plate to cool down.

Make the bacon: Fry up the bacon or other meat in the skillet until browned. Remove from pan and place on paper towels. Drain all the fat form the skilled except for about a teaspoon.

Scramble the eggs: Whisk the eggs, milk, hot sauce, salt, and pepper in a small bowl. Place skillet with reserved fat onto medium heat and scramble the eggs to your liking.

Assemble: Place scrambled eggs, bacon, cheese, salsa, and any other toppings into taco shell. Enjoy! Happy Cinco de Mayo!
